  1. Broccoli soup

Ingredients: 2 tablespoons of olive oil, 1 finely chopped red onion, 2 peeled potatoes, 1l of water, aromatic herbs, half a cup of peas, 1 cup of broccoli, half a cup of spinach leaves, a tablespoon of finely chopped mint leaves, and 1tablespoon of finely chopped green onion.

Preparation: Add the red onion in the olive oil and heat it up until golden. Add the diced potatoes and stir for a couple of minutes, and then add the water and the aromatic herbs of your choice. When it boils add the broccoli and cook that for 5 minutes. Turn the heat off and add the spinach leaves. Decorate with the green onion and the mint leaves. Serve warm.

  1. Beef bones soup

Ingredients: Beef bones, water and apple vinegar.

Preparation: Boil the bones in a pot of water and add 3 tablespoons of apple vinegar to help extract the minerals from the bones, and add salt and pepper for taste. Leave to simmer for 5 hours and use the mixture in other soups or eat it as it is (at least 1l a day).

  1. Chicken and green peas soup

Ingredients: 4 cups of chicken soup, 1 small onion, a cup and a half of green peas, 2 small celeries, 2 carrots, half a cup of brown rice, boiled and diced chicken.

Preparation: Soak the rice in cold water for 1 hour. Boil the soup and add the rice and the vegetables, as well. When the rice is cooked, add the diced chicken and leave to boil for another 4 minutes.

  1. Apples and onion soup

Ingredients: 1 tablespoon of canola oil, 2 onions, 1 small leek, 1 teaspoon of fresh rosemary, 1 teaspoon of fresh thyme, 3 apples, 6 cups of vegetables soup.

Preparation: Heat the oil at medium heat and the chopped onion. Leave until golden. Pour in the vegetables soup and leave to boil for a couple of minutes. Add everything else and simmer for 10 minutes.
